Ingredients
4Boneless Chicken Breasts/Chicken CutletsSeason both sides with olive oil, Kosher salt, coarse ground, cracked pepper, and garlic powder
1PackageMixed Greens, 50/50 Blend, or Spring Mix (we like organic) Wash thoroughly and lay on dish towel to dry.
1ContainerCherry tomatoesWashed and sliced in half
1ContainerFresh mini mozzerella ballsdrained and sliced in half
Fresh Basil—as much as you want—rinsed, dried, and chopped
Basalmic Vinaigrette
1/3CupOlive oil
2tbspBalsamic vinegar
1tspDijon mustard
1tspHoney
1tspLemon juice
1/8-1/4tspteaspoon of kosher salt and black pepper
Instructions
Grill 10-12 minutes/until done depending on grill and technique
Take off grill, cover with foil, and let rest for 5-10 minutes
Slice chicken into thin, bite-size pieces.
Dressing: Basalmic Vinaigrette
Combine ingredients then whisk or blend. Will keep in refrigerator for up to one week. NOTE: This particular salad requires a double recipe of dressing.
