This Chicken Caprese Salad is so flavorful with tender and juicy chicken breast in every bite. Loaded with veggies, protein, and tossed with a delicious honey balsamic dressing.

Ingredients
- 4 Boneless Chicken Breasts/Chicken Cutlets Season both sides with olive oil, Kosher salt, coarse ground, cracked pepper, and garlic powder
- 1 Package Mixed Greens, 50/50 Blend, or Spring Mix (we like organic) Wash thoroughly and lay on dish towel to dry.
- 1 Container Cherry tomatoes Washed and sliced in half
- 1 Container Fresh mini mozzerella balls drained and sliced in half
- Fresh Basil—as much as you want—rinsed, dried, and chopped
Basalmic Vinaigrette
- 1/3 Cup Olive oil
- 2 tbsp Balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp Honey
- 1 tsp Lemon juice
- 1/8-1/4 tsp teaspoon of kosher salt and black pepper
Instructions
- Grill 10-12 minutes/until done depending on grill and technique
- Take off grill, cover with foil, and let rest for 5-10 minutes
- Slice chicken into thin, bite-size pieces.
- Dressing: Basalmic Vinaigrette
- Combine ingredients then whisk or blend. Will keep in refrigerator for up to one week. NOTE: This particular salad requires a double recipe of dressing.
